Monday Munchies: Gourmet Personal Pizza

For the past week, I’ve been working on a detailed proposal for Avalon Travel. Since it’s due next week, and I still have a lot of work ahead of me, I’ve asked Dan, my cooking hubby extraordinaire, to once again be my guest chef for today’s “Monday Munchies.” Over on his blog, he’s offered his awesome Summer Stew recipe, which just happens to suit any season. But, over here, he’s featuring his yummy, customized, interactive mini-pizzas – one of my favorite Danny Boy creations. So, start your engines – and may the gastrointestinal fun begin!

Get away from the humdrum pizza you have delivered or prepare from a cardboard box. This recipe provides an easy-to-make, yet original pizza, to impress your family, your friends, and your significant other.

Gourmet Personal Pizza

Serves: 6-8
Total Time: 30 min.

Ingredients:

  • 1 tsp Extra Virgin Olive Oil per pizza
  • 2 cups of Mozzarella, shredded
  • Havarti Cheese (1 slice per Pizza), cut into strips
  • 1 medium Tomato, thinly sliced
  • 1/2 medium Onion, diced
  • 1 can of Baby Corn, diced
  • 4 oz. sliced Pepperoni
  • 2 slices of Ham, cut into half-inch squares
  • 1 ripe Avocado, thinly sliced (3-4 thin slices per Pizza)
  • 4 oz. of fresh Mushrooms, sliced
  • 15 oz. can of Medium Ripe Olives, sliced
  • 1 tsp Garlic Powder for each Pizza
  • 15 oz. can/jar of Pizza Sauce
  • Whole Wheat Pita Bread, 6-8 rounds
Directions:
  1. Pre-heat oven to 375.
  2. On baking sheet, spread 1 tsp of Extra Virgin Olive Oil over the top of each Pita Bread.
  3. Sprinkle Garlic Powder around edge of each Pita Bread.
  4. Bake the Pita Bread for 5-7 minutes. Remove from oven and allow to cool for 10 minutes.
  5. Spread 2 TBS of Sauce on each Pizza.
  6. Layer each Pizza with the ingredients, careful not to go overboard. You can ask your guests what they would like on their Pizzas, but encourage them to try a fully-loaded one (start with the thin, flat ingredients).
  7. Sprinkle the Mozzarella on top, covering each pizza.
  8. Lay the strips of Havarti on top.
  9. Bake for 6-8 minutes, until the Cheese is completely melted. For crisper crust, bake for 8-10 minutes.
Once you see how easy it is to put these together, you'll be making them all the time!

Those sound super-duper tasty! I'll definitely have to cut the mushrooms and ham if I expect to make it at home though -- my wife's expressed her hatred for both numerous times.

As usual, yum! I make home-made pizza too, but with 2 hungry boys I make a big batch of dough and 2 big pies. I hate to think of how much I'll have to make when they're both teen-agers! BTW, I started a blog! You're totally right about how easy it was!

The three things that really make the taste so special on these pizzas; avocado, baby corn, and especially the Havarti cheese.

Also, you can eat these with a fork, or cut them in half and eat with your hands!

Becky, I make my own dough every once in a while, but the pita is so quick and usually only $1.50 for the pack of them... plus, it allows everyone to make their own pizza, with the toppings they like.

I have also put shrimp on them if I don't feel like having pepperoni or ham.

Perhaps it's b/c I'm lame or a Neanderthal, but I like chain pizza (particularly Papa Murphy's stuffed take 'n bakes -- ummm, ummm good).

Dan, while you're standing in, thought I'd throw e-darts at you for making the rest of Maledom look bad last week with your RAOK (random act of kindness, which sounds like a noise a cat in heat might make... perhaps RAOL -- sounds nicer/latin loverish)... All joking aside, good work.

They look divine. I have never heard of Havarti cheese, need to get on to google. I think even fussy toddlers would give that pizza a go.

Thank you. Thank you. This looks and sounds so good and simple that my mouth is near watering point. I MUST have pizza today. I love making whole wheat pizzas but I have a hard time finding pre-prepared crusts. The whole pita bread thing is a perfect idea that I'd never had.

I keep trying to convince her otherwise, but she refuses to eat them because they're a fungus.

My rejoinder of "But they're a tasty fungus" has no effect unfortunately.

Chris - Never heard of Havarti cheese?! How is that possible? And, yes, these pizzas are divine. As for fussy toddlers, well, let me put it this way - even our picky, picky nieces will eat these mini-pizzas willingly.

Regina - Glad Dan's recipe could inspire you... and get you craving pizza. I must admit, I wish pizza were a possibility for me, too, but alas it's a diet day. Boo-hiss. And, yes, I'm a big fan of whole wheat crusts, so using whole wheat pita bread is a terrific option!

Another reason to try this, is that it is an interactive meal. Everyone can fix their own pizza, with their own toppings... if someone doesn't like mushrooms, they can skip it.
